I wish you a Marry Christmas! In two it starts! I have bigos, tested few cakes, even made a white Pavlova Christmas tree with a fake sugar snow. I have a tiny list of dishes to make, nothing big, only ones me and Tomasz like, so we can make Mia like them as well. It will be: “eat this or nothing!” or… I’ll prepare whatever else you want (motherhood…). I don’t get too crazy for Christmas, unless we have guests over. This year we don’t. It’s just three of us, plus 2 cats, plus two cats of neighbours. We have a tree, not a Christmas one yet, because Mia doesn’t get an institution of dressing a tree. She loves undressing it, so whatever I put on it, she takes off and place in her box (she has one for everything she finds in our apartment, in many cases keys included). Mia is on a sick leave from kindergarten, so she has a lot of time to undress our tree.

Each year I have a problem with presents. It’s mostly because I buy things when I need them and I never know what others need. The tricky part is, that when you ask, people don’t tell you, they say that I don’t need to get anything or I can buy whatever I like. Not helpful! I love handmade presents, especially one you can eat.

This year someone asked me what I wish for. And this is a serious question. So I started to answer it:

– I wish for Mia to be happy, to feel free to experience, to do things and to love me kissing her chubby chicks constantly,

– I wish I didn’t worry so much about the future, as since I’m a mom I think about it too often,

– I wish to read all the books I bought during this Christmas (I know it won’t happen already),

– I wish I didn’t need to sleep, which means I can work, spend time with my family and have time for myself,

– I wish for people to stop being angry, as I can see how it spreads around on everyday basis,

– I wish for honesty, because it’s easy and awesome,

– I wish for a bed under my mattress, shelf on my kitchen wall and new lock so I can finally open a drawer with shoes.

That’s pretty much it. What do you wish for?

The recipe is delicious, easy, and awesome! It will make a perfect Christmas breakfast, you can prefer the dough night before and just bake it in the morning. It’s not too sweet as I didn’t add syrup or honey, but I like it this way. If you prefer it sweeter, add some honey 🙂

The Recipe

YOU WILL NEED FOR 8-10:

  • 1 and ¼ cup coconut flour
  • ¼ cup potato flour
  • ¼ cup palm sugar
  • 125g cold butter
  • ½ cup seeds like pumpkin, sunflower, finely chopped
  • 1 egg

YOU WILL NEED FOR THE FILLING:

  • 250g mascarpone
  • 1 orange – juice and zest
  • pinch of saffron
  • mint for serving
  • pistachios for serving
  • more orange zest for serving
Mix flours and sugar in a bowl, add butter, cut in small pieces and rub it with your fingers, so it will start to look like bread crumbs. Add egg and chopped seeds and knead the dough with your hand. The dough may be dryish, as long as it glues, it’s ok. Cover the bowl and place in a fridge for 30 minutes-1h.

Place dough in between a baking paper and roll it. Cut our round shapes and place in forms. Bake in 180*C for about 20 minutes.

Let your tarts cool and meantime prepare the filling. In a bowl, mix mascarpone with an orange juice and zest, add some saffron. Place tablespoon of the mix in each tart, decorate with mint, pistachios (you can fry them a bit) and some orange zest.
